1. Easy Lemon Chicken

Lemon chicken is easy to make and a healthy budget recipe. You can buy boneless, skinless chicken breasts for as low as $3-4 per pound at a discount grocery store. Heat a nonstick pan and cook the breasts for 2-3 tablespoons each. Add a cup of chicken broth and some lemon juice to taste. Let the breasts simmer in the liquid until cooked through. Season with salt.

2. Apple Spice Oatmeal

Oatmeal tends to be boring and bland. But you can spice it up with some simple ingredients. To make the oatmeal, boil one-half of the water. Add the oats once the water has reached a rolling boil. You can also add small, thin slices of apple. Add brown sugar, cinnamon and nutmeg to the oats until you get the desired taste.

3. Cranberry Tuna Salad

Tuna has also been referred to as a food that is “just okay”, but not great. This great recipe is budget friendly and will help dispel that myth. Begin with a can chunky light or albacore tuna. Drain any extra water. 2 tablespoons of light mustard, a pinch salt, a handful cranberries and 2 tablespoons brown sugar to the tuna. Combine all of the ingredients and you have a tasty tuna salad.

4. Lean Minestrone

Most minestrones contain Italian sausage and other fatty meats. We’re using a healthier recipe that uses ground turkey. Begin by browning the turkey on a skillet. Season it with salt and pepper. Once the turkey is browned, add the vegetables to a slow-cooker. Cook on low for 6 hours or until the chicken is tender. Add in 3-4 cups of chicken broth. Serve with your favorite small pasta such as shells or bowties, and grated parmesan cheese.

5. Sugar-Free Pastries

Parfaits make a wonderful dessert or breakfast choice, but they are often high in sugar. You can make a healthier version by using low-fat yogurt. Add some vanilla extract and splenda to sweeten it. Make syrupy, delicious fruit by sauteing slices of strawberries or blueberries in some splenda. Let the fruit cool in the fridge before layering it with the sweetened yogurt, low-fat breadcrumbs and granola.
